Taste.com.au have a new famous blogger and she will be familiar to many. Marion Grasby has taken on the re-launched Taste Kitchen and has her own club called Marion’s Kitchen that already features lots of recipes, how to videos and hints and tips for cooking yummy foods like Christmas Trifle Cups and Pork and Prawn Springrolls. Marion has joined the Taste Team to celebrate a big milestone.

Did you know that Taste.com.au has been sharing recipes and helping people find that simple dinner solution for 5 years! I didn’t realise this until recently and this big milestone means big celebrations with some amazing prize up for grabs! How does a trip to Thailand worth $11,000 sound? I certainly wouldn’t mind laying on a white sand beach with someone serving me drinks after all the Christmas rush! Or how does a Thermomix worth almost $2000 sound as a second prize! Now you can be a Masterchef!

Marion is a wealth of knowledge when it comes to cooking and food and recently I was lucky enough to pick her brain with some questions I have always wanted to know from an expert.

What is your favourite Summer recipe that is quick and easy?

My staple summer dessert is a Christmas pudding semi-freddo.

CHRISTMAS PUDDING SEMIFREDDO

1L vanilla ice cream

200g Christmas pudding, crumbled into small chunks

100g almond or hazelnut chocolate block, cut into small chunks

1 punnet raspberries or 100g glace cherries (roughly chopped)

Place vanilla ice cream in a large mixing bowl.  Mix through pudding, chocolate pieces and raspberries or cherries.  Transfer to a loaf tin lined with cling film and freeze until firm. Freeze until firm.  To serve, cut into thick slices and top with extra grated chocolate or raspberries.

How good does this sound!!! Yum!! I think I might make this for our New Years Eve Celebrations!

What essential pantry ingredients do you recommend to always have on hand?

I’m a bit biased but I always make sure I’ve got my Marion’s Kitchen Pad Thai pack in my pantry.  It has my own pad thai sauce and noodles in the pack, which means I just have to add some chicken, an egg and a squeeze of lime and I’ve got a super yummy dinner on the table in less than 20 minutes.

What are your best tips for creating your own recipe?

Keep it simple.  I think that often the less you do to food, the better it tastes.

What are your best tips for making an existing recipe your own?

I think fresh herbs or pantry spices are the best way to add extra flavour to existing recipes.  For example, if an Italian recipe asks for basil, I might add basil as well as fresh thyme, oregano and rosemary.  Extra herbs and spices will often add that extra boost of flavour.
