Self taught cook and sustainable food advocate Kate Walsh says learning how to cook a few kitchen staples from scratch, using fresh local and seasonal produce, is the best way to improve our health and our food system. She reckons that all you need to start with is a large bowl and wooden spoon and we think she's right!

The book's full title is Real Food Projects: 30 skills. 46 recipes. From scratch. Granola, butter, no-knead bread, pizza dough, tortillas, wok-smoked chicken plus jams, mustard and crackers and even sausages – simple recipes, many shown step by step. Think cordials to knock your socks off that are dead easy to make, cheat's creamy ricotta and a range of nut butters for toast (or spoons!). Home-made things that will taste better than anything you can buy at a supermarket. And you can cook them.

No fancy, complicated (and often expensive) equipment is needed and mistakes can laughed off into other dishes. This is an excellent book for home cooks at all levels but especially those who would like to hone their skills on the basics and build up from there.
