Each year, the AO Chef Series assembles a new line-up of culinary innovators from around Australia and further afield to deliver a degustation of their own polished persuasion.
For 2021, the common thread that binds the chefs in residence is they’re all leaders in sustainable dining – driven by the seasonal, ethically farmed and foraged ingredients they grow or source from producers local to their respective restaurants, in some of Victoria’s tastiest corners.
This February the AO Chef Series is bringing them to Melbourne.
Throughout the tennis event, diners will have their tastebuds transported to the Mornington Peninsula care of the hyperlocal handiwork of Point Leo Estate’s Phil Wood, while Michael Ryan of Provenance takes us to Beechworth (via Japan). Jo Barrett of Oakridge Wines will plate up her lauded zero-waste Yarra Valley fare, while Mark Briggs of idyllic lakeside restaurant Sardine Eatery and Bar might inspire a sea change or two with his passion for Gippsland produce.
In partnership with Tennis Australia, we’re giving you (and a mate) the chance to win a four-course dinner with matched wines with Gippsland’s Mark Briggs as resident chef. Briggs worked at Michelin-star restaurants in his native UK and ran the Vue de Monde kitchen for four years, until 2017 when he and partner Victoria Hollingsworth packed up their city life and headed east to Paynesville. There they operate an elegant, relaxed bistro overlooking a glistening sliver of the lake system from which so much of its premium seafood comes. Combined with some of the best homegrown produce in the region, it’s a stunning advertisement for the Gippsland food and drink. Post-feast, the winning duo will take in the night match from the prized vantage point of the Rod Laver Arena lower bowl. All together it might just be the hottest ticket in town.
