Bondi Boulangerie is locally owned and operated as a French bakery—a family tradition since 1973. Originating in Albi, southwest France, our family bakery began nearly 50 years ago, with expertise passed down from father to son. We specialize in natural dough and artisan bread-making processes, with a focus on pain au levain, the French term for naturally leavened bread considered the gold standard for wild yeast loaves. Our baking process includes careful kneading, shaping, proving, and honeycombing to achieve superior flavor and texture. Finally, we bake every loaf in a refractory stone oven, delivering a truly unique taste that we hope everyone will enjoy.
