This month we’re giving away a signed copy of Giovanni Pilu’s and Roberta Muir’s cookbook A Sardinian Cookbook.
Sardinian cuisine is born out of necessity; making use of the ingredients found in the mountains and forests such as fennel, asparagus, chicory and nettles, nuts, berries and honey. Rabbit, game and wild boar are still hunted in the traditional and time-honoured manner. And those living close to the coast gather clams, mussels and crabs for soups and sauces.
Goivanni Pilu believes Sardinian cooking should involve fresh local produce, prepared simply to allow the flavours of the ingredients speak for themselves. Since opening Pilu at Freshwater in 2004, he has expanded his Sardinian repertoire, cooking the food that’s in his blood and close to his heart. This is captured beautifully and simply in A Sardinian Cookbook
