Of course, Indigenous Australians were cultivating bushfood tens of thousands of years before René Redzepi came along. For many Indigenous communities, bushfoods are totemic and essential – not a gourmet fad. Now, the "cool factor" is leading to cases of cultural appropriation, and even the exploitation of some Indigenous people.
