InterContinental Sanctuary Cove Resort’s signature restaurant, The Fireplace, showcases woodfired cuisine at its finest. Executive chef Hamish Watt and head chef Randy Tabla have expertly curated the restaurant’s seasonal menu, crafted from locally sourced produce and fresh herbs grown on site in the resort’s lush garden. Each season, The Fireplace debuts new a la carte and six-course degustation menus, inviting diners to settle in to its rustic surrounds while watching the chefs plate culinary art before their eyes. Menu highlights include seared scallops with pancetta, cauliflower mash, shimeji mushrooms and vincotta, woodfire-grilled quail with pearl barley, carrots, apple puree and port wine jus, and a selection of succulent Queensland-sourced steaks, with all items designed to showcase the distinctive flavours of the red-gum woodfired oven.
