When a recipe refers to baking blind what does this mean?
Baking with your eyes closed
 Baking a pie crust or pastry without the filling
 Baking a pie crust or pastry within a thin material liner

Bake blind

Baking 'blind' is when a pastry or pie crust is baked without the filling. Baking blind is required if the pie filling would make the crust soggy if added when uncooked, or if it requires a longer baking time than the pie filling.

The inside is filled with dried beans such as lentils or chickpeas, rice or special metal or ceramic pie weights, and then baked for the required time. They are usually removed for the last 5 minutes of baking to allow the base to fully cook.
