Just released on 1st September 2013, Luke Mangan's latest book features some of the signature dishes from his Salt Grill restaurants along with some of his personal favourites. This book has an emphasis on dishes to share with family and friends with recipes that are home cook friendly.

When Luke Mangan opened his first restaurant in 1999 in Sydney's Darlinghurst, he soon became known as much for his presence in the restaurant as in the kitchen. As soon as the cooking was done, Luke was into the restaurant to see if the diners were enjoying their meals. He just loved to be part of their experience of consuming as being part of the preparation.
This sharing philosophy is the inspiration for the book Salt Grill which highlights his approach to cooking. Luke says he want to 'cook food I can eat right now – food based on freshness and the best ingredients you can buy.'
His creations are often a mix of the unexpected using simple flavours to enhance the natural taste of the ingredients. Salt Grill captures this signature elegance in recipes designed to share – like the Chinese way of the big plate in the middle of the table or the Spainish idea of tapas.
It includes Luke's his favourite recipes from Seafood Tapas to Baked Lemon Sole with Prawns and Chorizo to the famous Salt Salad along with simple twists on old favourites like Orange Lamingtons, Bread and Butter Pudding and Waldorf Salad with Bresaola and untwisted standards like Lobster Thermidor, Salt and Pepper Squid and Floating Islands.

Why the name Salt Grill?
In ancient times, salt was a rare and valued item and was often given as a symbol of hospitality and friendship by many cultures. Given these two characteristics are intrinsic in Luke's restaurants, Salt was chosen to represent them through his eight restaurants around the world.
