The Local Producers Masterclass and Lunch from Salt Meats Cheese

Four local NSW artisan producers take us on a journey from Pasture to Plate, through a series of Masterclass demonstrations. Enjoy a day with us learning about fresh local produce and the importance of sustainable, organic ingredients. Held on Saturday April 12, 2014 11am-3pm at Salt Meats Cheese, 41 Bourke Road, Alexandria, 2015.

Distributed from the farm to fine dining establishments, learn how Pepe Saya’s butter & Country Valley Milk is made. Pepe and John will explain why buttermilk is the new Black in food, challenge salted vs. unsalted butter and how cream is produced and cultured. Understanding the ins and outs of cultured butter and the hand-worked process, will allow you to appreciate how Pepe Saya’s Butter taste like perfection on bread, and why top tier dining establishments and bakers prefer this home churned butter.

Did you know that many big brands add 12% permeate to their milk and it is not on the label! Permeate is a by-product from the production of skim milk, a thin watery substance that acts as a cheap filler. Country Valley does not add permeate or for that matter anything else to its milk. John, who runs Country Valley and ensures the herd is happy and healthy, shows us how with love and care, he put 100% milk and nothing else on supermarket shelves. His dairy products have won many awards recently & proves the difference you can taste!

Winner – Champion Milk – Organic Lite
Gold – Organic Lite Milk
Gold – Plain Yoghurt
Silver – Premium Full Cream Milk
Silver – Organic Full Cream Milk
Silver – Premium Skim Milk
Silver – Natural Yoghurt
Silver – Classic Cream

Yarra Valley Caviar represent the top tier of sustainable seafood in Australia, who farm Salmon & trout for their products in an ethical manner. They present their live hand-milked salmon caviar, showing how their farm in Victoria milk the fish for caviar once a year before placing them back into their pond to spawn for the next year. Witness this amazing process, of live hand-milking fish, to obtain the freshest and tastiest caviar which you can really appreciate.

Lowe Wines explains the new frontier of biodynamic & organic wines. He will contrast conventional wine tradition with new method of farming and production. David Lowe speaks honestly and unpretentiously of his trade, bringing wine that can be shared and enjoyed with friends and food – as an organic grower and producer, he shares his experience of not only his handcrafted wine, but simply his love of the product itself!

Brasserie Bread Just Announced!
Matt from Brasserie Bread will unearth the mysteries of artisan sourdough, focusing on selecting high-quality and organic ingredients as well as bringing along Brasserie Bread’s 19-year-old sourdough starter. He will discuss the fermentation process of artisan baking and the characteristics of organic sourdough. Find out for yourself what artisan bread feels, smells and tastes like.

The 2 hr masterclass demonstration is followed by a sit down lunch prepared with a produce-focused menu. Enjoy learning about these 4 local producers, their trade and passion for healthy living and food culture.
