Join our award-winning Culinary Masters as they create locally inspired degustation dinners at the inaugural Culinary Stars Showcase, 7 – 10 November 2022.
From JW culinary classes and traditional high tea to decadent degustation dinners, the award-winning culinary team will showcase their expertise, crafting distinctive dishes using local Queensland produce.
Monday 7 November | 6pm – $149 per guest
Ocean to plate – Cocktail pairing – Inspired by ocean to plate dining, indulge in a four-course degustation.
Headlining snow fish ceviche, red emperor, ocean beef and oysters, finishing with a veliche dark chocolate tart.
Chefs: Richard Le Deunff, Paul Smart, Meyjitte Boughenout and Emir Kusbeci.
Tuesday 8 November | 6pm – $179 per guest
Hinterland to Plate – Wine and Cider pairing – Welcoming ingredients from the hinterland for a five-course degustation.
Indulge in zucchini flower, butter poached rainbow trout, wood-fired roasted quail, roasted lamb and Yuzu gold bar.
Chefs: Dayan Hartill-Law, Angela Brown, Richard Le Deunff, Gavin Hughes and Meyjitte Boughenout.
Wednesday 9 November | 2pm – $79 per guest
Traditional High Tea – A resort tradition created by our culinary team using local ingredients sourced from the Gold Coast Hinterland.
Each homemade product is inspired by the echo of birds in the peaceful and tranquil environment surroundings, finishing with chocolate hazelnut slice.

Wednesday 9 November | 6pm – $199 per guest
Farm to Plate – Witches Falls Wine pairing – A six-course degustation influenced by Australian flavours and inspired techniques.
Seven culinary masters come together to create a mouthwatering journey of lobster and caviar, Daintree barramundi, confit duck, Rocky farm cobia and peach illusion.
Chefs: Paul Smart, Dayan Hartill-Law, Richard Le Deunff, Gavin Hughes, Angela Brown and Emir Kusbeci.
